Curry leaf is an important ingredient in many Indian dishes  used primarily to add flavor to dishes and for seasoning. The first step in the preparation of many Indian dishes is frying curry leaves in oil along with mustard seeds and chopped onions. People also make juices with curry leaves. Since the health benefits of curry leaves are comparable to neem leaves, they are called 'Sweet Neem' leaves.
